Pear & Vanilla Pound Cake

Pear Loaf & Honey Whipped Butter
     Serves 6  

Roasted Pears

3 Pears- under ripe i used Warren Pears for this recipe
1/4 cup Brandy
2 tbsp sugar- organic cane sugar
3 tbsp unsalted butter
1 cinnamon stick broken

Peel and seed pears then cut into small wedges. Heat saute pan over high heat melt butter and brown lightly then add sugar, cinnamon stick and pears. Stir to coat and continue to cook until pears are caramelized then deglaze with brandy* cognac is fine too. Cool

Just added to saute pan












Batter

1 1/4 sticks unsalted butter- room temp
1 3/4 cup powdered sugar
4 eggs - organic free range
1 3/4 cup cake flour - sifted
1 tbsp baking powder
1/2 tsp fine sea salt
1 vanilla bean- scraped * may use 1 tsp vanilla extract

In mixer fitted with paddle attachment cream butter, vanilla and sugar together then add eggs in one at a time, scraping down sides after each addition. In a separate bowl mix together sifted flour, salt and baking powder* make sure your baking powder is fresh yes it expires ;). On low speed add in dry ingredients and mix to combine then gently fold in cold pears and pour batter into *prepared loaf pan.

* brush loaf pan with soft butter then dust with flour make sure coat evenly with butter and tap out excess flour




Batter is ready
