Armenian Breakfast Burritos

Ingredients


Ingredients                  Serves 2


4 Farm fresh eggs- lightly beaten
1  Red fresno chile * or jalapeno - sliced thinly

1/4 cup Feta cheese- crumbled
2 Green onion- sliced
1/4 c Yellow onion - small dice
1/2 Tomato-small dice
sea salt & cracked black pepper
6 Sprigs Cilantro
2 pieces Lavosh Flat Bread * may substitute tortilla





 In non stick pan heat a small amount of butter on medium heat. Saute the onion for 2 min then add in the tomato, green onion and chile cook for 1 min

Stirring eggs in a non stick pan








Then add in beaten eggs season with salt and black pepper. Stir eggs occasionally until just cooked. *Eggs should still be soft

Eggs are done when they look like this



Heat flat bread* or tortilla over flam for a few seconds to soften so you can roll it or place in hot oven for 1 min. Now your ready to roll your burrito. Place bread on a flat surface and fill with eggs, then top with feta and cilantro.







Now roll flat bread up like a sausage then trim ends and slice in center on an angle
* Tip make sure you roll it tight so the filling stays in
