Beef Kabobs with Farro Salad

Kabobs

2 10 oz NY Steaks * grass fed, hormone free,
-you can use any tender cut suitable for grilling flank steak would be good and is inexpensive
Extra virgin olive oil
Lemon
Oregano
Sea salt & black pepper
Skewers- wood or metal

Serve over


Farro Salad with Candied Squash Pomegranate and Feta




Beef cubes


Cube meat into large pieces then place in Ziploc bag with fresh garlic cloves, olive oil, lemon juice and fresh oregano. Seal bag making sure to press out any air lay flat in fridge and marinate for at least 1 hour.
once marinated remove from bag and skewer,  season well with sea salt and black pepper now your ready to grill.

Kabobs on the grill

Kabobs are done when they are are cooked to your desired doneness i like mine MR - Med. Once done remove from grill let rest 2-3 min then serve over rice, couscous or my Farro Salad
