Tropical Granola



Ingredients               

6 cups rolled oats
1 cup shredded unsweetened cocoanut
1/2 cup orange blossom honey
1 stick unsalted butter- melted
1/2 tsp fine sea salt
2 cups raw cashews
1 cup dried pineapple- cut in small pieces
1 cup dried papaya- cut in small pieces
1/3 cup flax seeds


In large bowl toss oats, cashews, butter, honey, cocoanut and salt together then spread evenly on parchment lined baking trays.

Bake at 350F for 15min or until golden brown. During cooking time toss mixture to evenly cook the oats and nuts, the outside edges tend to brown first.

Remove from oven and allow to cool completely then toss in bowl with dried fruit and flax seeds.

Place in airtight container cereal will keep for 1 month.

The Perfect Omelet

Ingredients

 Ingredients                     Serves 3


6 farm fresh eggs- lightly beaten
1 tbsp chopped chives
2 tbsp comte cheese- small dice * sub any cheese
2 tbsp ham- small dice* sub any meat
2 tbsp leeks- white part only sliced
fine sea salt & fresh cracked black pepper
3 tbsp unsalted butter

In medium bowl lightly beat eggs with a fork then add salt, pepper and chives.

Step 1
In omelete pan heat 1 tbsp butter and add 1/3 of  the leek
saute 1 min until cooked

Now add 1/3 of the ham











Step 3
Then add 1/3 of the egg mixture
 Step 4
                    
Stir the eggs to help cook them
evenly
                                                                Step 5
Once the eggs are almost cooked and
look like soft scrambles eggs form the edges
to make it perfectly round
Now let eggs cook 1/2-1 min to create a firm bottom

Carefully lift side of omelet

Add 1/3 of the cheese

Now gently fold egg over itself to the middle of the pan

Now carefully tip omelet over on to the plate
folding the omelet over itself

Omelet is now folded with 2 edges under it

Cornmeal Waffles with Whipped Marscapone

Serves 3-4


Ingredients


1 1/4 cup all purpose organic flour
1/2 cup cornmeal
2 tbsp organic cane sugar
1 tbsp aluminum free baking powder
1/2 tsp fine sea salt
zest of 1 lemon

1 1/2 cup buttermilk
1/2 cup melted butter
2 egg yolks * save whites set aside

Waffle Batter

2 whites - room temp

Combine all dry ingredients in large bowl and whisk together then set aside. In medium size bowl combine all the wet ingredients and whisk together. Now add wet ingredients to dry stirring to combine then set aside. Now whip egg whites until soft peaks form then gently fold into the waffle batter.
Set waffle iron to desired temperature and cook until done.

Waffle Cooked



To serve top with vanilla whipped marscapone, maple syrup and powdered sugar.

Armenian Breakfast Burritos

Ingredients


Ingredients                  Serves 2


4 Farm fresh eggs- lightly beaten
1  Red fresno chile * or jalapeno - sliced thinly

1/4 cup Feta cheese- crumbled
2 Green onion- sliced
1/4 c Yellow onion - small dice
1/2 Tomato-small dice
sea salt & cracked black pepper
6 Sprigs Cilantro
2 pieces Lavosh Flat Bread * may substitute tortilla





 In non stick pan heat a small amount of butter on medium heat. Saute the onion for 2 min then add in the tomato, green onion and chile cook for 1 min

Stirring eggs in a non stick pan








Then add in beaten eggs season with salt and black pepper. Stir eggs occasionally until just cooked. *Eggs should still be soft

Eggs are done when they look like this



Heat flat bread* or tortilla over flam for a few seconds to soften so you can roll it or place in hot oven for 1 min. Now your ready to roll your burrito. Place bread on a flat surface and fill with eggs, then top with feta and cilantro.







Now roll flat bread up like a sausage then trim ends and slice in center on an angle
* Tip make sure you roll it tight so the filling stays in
